First Layer
- 2 cups Einkorn flour
- ¾ cup butter
- 1 cup finely chopped nuts (almonds or pecans)
Mix together until crumbly. Press into a 9 x 13 pan. Bake at 350 degrees for 15 minutes. Cool.
Second Layer
- 1 package cream cheese, softened
- 1 cup whipping cream, whipped
- 1 package Vanilla Sugar
Beat cream cheese until fluffy. Beat whipped cream and vanilla sugar until stiff. Beat all together. Spread over cooled crust.
Third Layer
- 1 package Lemon Pie Filling (size that makes one pie) **
Prepare pie filling according to directions on box, using one whole egg in recipe. Cool, stirring often. Pour over cream cheese layer.
Fourth Layer
- 2 cups whipping cream
- 1 package vanilla sugar
Beat together. Spread over lemon layer.
** any pudding can be substituted instead of the Lemon Pie Filling. Chocolate, Pistachio and Butterscotch are all good. Use two small boxes of pudding for one recipe, and mix with 2 cups milk.
