For the cake:
- 2 cups Einkorn Flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp baking soda
- 1 tsp ground all spice
- 4 eggs
- 1 cup melted butter
- 1 cup honey
- 1 1/2 cups pumpkin puree
For the frosting:
- 8 -ounce package of cream cheese, softened
- 1/2 cup butter, softened
- 3 tbls pure maple syrup
- 1 tsp vanilla extract
- 1 cup organic powdered sugar
Instructions:
- Preheat oven to 350 F
- Butter and flour a 9X13 pan
- In a large bowl, whisk together all dry ingredients
- In your mixture, mix together eggs, butter, honey and pumpkin on low speed. Then add dry ingredients 1/4 cup at a time until combined. Do not over mix.
- Pour batter into the pan and bake for 20-25 mins, until a toothpick poked into the middle comes out clean.
- Let cool completely
- In medium bowl mix together cream cheese and butter until smooth.
- Add maple syrup, vanilla, and powdered sugar
- Mix on medium until creamy
- Spread on cooled cake
